The whole existence of FLNX is based on classes and methods and
inheritance.  I'm not sure if FLTK has ever been ported to C, but from
the current sate of FLNX, a move to C++ from C would be both painful and
frustrating.  If you succeed, make sure you send pictures... :-)

You can check the FLTK website (www.fltk.org) for tutorials that will
help you get started on FLNX.  Basically, any program that was written
in FLTK 1.0.7 should port straight across, so I don't see any reason why
the tutorials shouldn't be the same.  But the example files are the best
that I've found for getting started.
