To set the baud rate to 1200 you can do this:
stty 1200 < /dev/ttyS0 > /dev/ttyS0
There are many other parameters you can specify (eg. crtscts turns
hardware flow control on and -crtscts turns it off). See the stty man
and info pages for details.
